Potato Flour Pizza Dough

If you’re looking for a reduced-gluten pizza dough, try this no-knead recipe that features potato flour as a key ingredient.

I originally made this pizza without weighing anything, so I can confirm it’s easy to make, and can serve as the perfect base for your favorite pizza toppings.

Pizza Ingredients

  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Whole Wheat Flour
  • 3/4 cup Potato Flour
  • 1/2 cup Cornmeal
  • 1 tsp Baking Powder
  • 1 tsp Sugar
  • 1 1/2 tsp Salt
  • 1 Tbsp Yeast
  • 2 Tbsp Ground Flax
  • 1 to 1 & 1/2 Cup warm water (110-115°F)
  • Oil (any kind)

Pizza Making Instructions

Combine Ingredients:

    • In a large bowl, combine all-purpose flour, whole wheat flour, potato flour, baking powder, salt, yeast, ground flax, sugar, and warm water.
    • Start by adding 3/4 cup of water, and add more as. needed, to achieve a dough consistency.
    • Close the lid tightly and shake the bowl vigorously for about 30 seconds to mix all ingredients.

First Rise:

    • Let the dough rise for 1 hour in the bowl, covered.

Second Rise:

    • Grease a pizza pan or other oven-safe container generously with oil, ensuring to coat the corners.
    • Transfer the dough to the prepared pan, and spread it evenly to reach all corners.
    • Let the dough rise for another 2 hours.

Add Toppings:

    • Choose your favorite pizza toppings and arrange them over the potato flour pizza dough.

Bake Pizza:

    • Preheat oven to the highest setting.
    • Bake the pizza for 8-10 minutes, or until the crust is golden brown and the toppings are cooked to your liking.
